Chilli Mud Crab OBM Style – Snez Cooks Up a Cracker!
We took our new custom plate rig down the local creek to drop the pots in for an overnight soak—and let’s just say, the crabs didn’t stand a chance. This trip wasn’t just about putting the new boat through its paces—it was also our first real test to see if crabbing is actually worth it these days.
Back at camp, Snez fired up the wok and whipped up her version of a classic Aussie chilli mud crab, and trust us—this one’s a belter. No black beans. No rice. Just a bed of stir-fried vegetables soaked in spicy, sticky, crabby goodness.

Snez’s OBM Chilli Mud Crab Recipe
Ingredients
2 whole mud crabs (cleaned and chopped into quarters)
4 tablespoons vegetable oil
4 tablespoons fresh ginger (grated)
2 tablespoons red chillies (sliced or chopped, adjust to taste) We used chilli flakes
1 tablespoon tomato paste
1 tablespoon sugar
2 tablespoons soy sauce
200ml tomato puree
3 - 4 tablespoons sweet chilli sauce
1 tablespoon white vinegar
2 tablespoons coconut cream
2 tablespoons garlic (minced)
A hand full of coriander (chopped)
A hand full of shallots (chopped)
Optional (but not used in our version):
2 tablespoons canned black beans (crushed)
Rice (we served ours over stewed veg instead)
Method
Step 1: Prep the Crabs
Clean and chop your mud crabs into quarters. Crack the claws & set aside and get your wok ready.
Step 2: Cook the Crab
Heat the oil in a wok over medium-high heat. Add the crab pieces and stir-fry until they start turning bright orange and are nearly cooked through.
Step 3: Make the Sauce
Add all remaining ingredients except the shallots. Stir well and simmer, stirring frequently, until the crab is fully cooked and coated in that rich, spicy sauce.
Step 4: Final Touch
Toss through the chopped shallots just before serving for a fresh, oniony pop.
Step 5: Serve OBM Style
Skip the rice—we plated ours on a bed of stewed veg. Load up, crack in, and enjoy!
Notes from Snez
This one’s messy—in the best way. Napkins are a must.
Adjust the chilli level depending on how hot you like it.
The coconut cream adds a subtle richness that pulls it all together.
